With Fuku, chef David Chang is attempting to do for chicken sandwiches what he did for the pork bun when he opened Momofuku Noodle Bar. The habanero-marinated buttermilk-soaked fried chicken patty spills out of the soft, non-intrusive bun. The texture is all delightful crunch and then the subtle spiciness sinks into the taste buds; the interior is chewy and juicy. Or try your chicken in Fuku Fingers form, equally crispy and satisfying.
