The tomato trilogy soup engages with a blend of smoky yellow tomato gazpacho infused with basil oil, a helping of cherry tomatoes stuffed with truffles and Swiss chard, and a tartlet of tomato and onion confit. Starters such as this showcase the creativity and simplicity that chef Mark Gaffney brings to the seasonal menu. Try the chef’s inspiration, which will vary with the day; best to let your server tempt you with the description. Or simply trust in the goodness of the vanilla-infused veal sweetbreads with a purée of Rattee potato and buttermilk, salsify and girolles roasted with hazelnuts, hazelnut froth and veal jus reduction. A carefully crafted and always evolving wine list enhances the menu.
