 The Georgian Restaurant Review: The elegant atmosphere and French-inspired Pacific Northwest cuisine at The Georgian, located in Seattle’s historic Fairmont Olympic Hotel, make it appropriate for celebrations and special occasions. Tables are beautifully appointed; service is professional; the wine list notable. Appetizers have ranged from crispy honey-glazed pork belly to a seared foie gras and fig tart, while entrées can include scallops with crisp potatoes, leeks and truffle/bacon butter sauce; roasted rack of lamb with beets and toasted red quinoa; and organic free-range chicken wrapped in chorizo and paired with red wine risotto and balsamic onions. Dungeness crab bisque is accompanied by tarragon-infused crab cakes. End on a sweet note with a milk chocolate caramel cream or the evening's featured soufflé. Begin or end your meal with a leisurely cocktail or brandy on The Terrace, with soft piano music in the background. The Georgian also serves lunch and afternoon tea. |
