 One of Seattle's most elegant restaurants, The Georgian is located in the historic Fairmont Olympic Hotel. Legendary for its professional service and notable wine list, the dining room continues this high style with beautifully appointed tables and a refined atmosphere. A menu featuring French-inspired, Pacific Northwest cuisine includes signature dishes such as a morel and chanterelle tart, and Dungeness crab bisque garnished with rich, thickened cream and caviar. Entrées range from prosciutto-wrapped black cod and lobster to an Angus beef filet with braised oxtail and shallots. Choose the black and white soufflé as a sweet finale. Begin or end your meal with a leisurely cocktail or brandy on The Terrace while piano music plays softly in the background. The Georgian also serves lunch and an impressive afternoon tea.
