Crowds continue to gather at the former Green Village, where on every table you will see people eating the Ning-po Fried Seaweed Yellow Fish. It's fish-and-chips without the chips, but with a lot more character: Pieces of fish fillets are deep-fried in a flour batter with strands of seaweed inside. A salt-and-pepper dipping salt is provided on the side. The rest of Green Village's menu is chock full of favorites from the Jiangzhe region of eastern China. This is the area with the most sophisticated cooking tradition in all of China. Dishes worth trying are the lion's head casseroles containing variously fish head, crab meat, or simply Napa cabbage. The Braised Spring Rolls are particularly good. Also look for scads of eel dishes, such as Stir-fried Eel with Chives (yellow nira).
