| The third establishment of husband and wife restaurateurs Justin and Lea Ault in the downtown neighbourhood of Yaletown sticks to their original format but adds some creative innovations. Heading the kitchen, lead chef Hokuto Yamanaka prepares an interpretation of hapa, traditional Japanese-style pub food. The young, energetic clientele in Yaletown settles into the sleek room to order lively negitoro served with soft, thick slices of garlic bread, and the “om-rice” bowl---a comforting mix of egg, pork, flower chives, tomato and spicy miso. Rice bowl fans like to press the rice mixture against the sizzling stone bowl to maximize its toasty tidbits. A creamy, almond-scented tofu topped with pure Canadian maple syrup rounds out the meal. Warm, welcoming service and bar offerings, a daily fresh sheet plus 25 varieties of saké make this the top izakaya experience in town.
