Can’t get to Texas for some real Lone Star State barbecue? Well, Hill Country is the next best thing, serving up authentic ’cue modeled directly on the kind dished out at the Kreuz Market in Lockhart, Texas. Upon arrival, start the evening with a Texas-import: Lone Star beer. Diners are given a ticket and they proceed to three stations --- one for meat, one for sides, and one for sweets --- to order by the pound or container. Brisket is served either as moist (fatty) or lean (slightly less fatty) and both arrive smoky, tender and wrapped in butcher paper. The gargantuan pork spare ribs unleash one’s inner caveman, while the beer will coax a yee-haw. The sausages, also imported from Kreuz, are first-rate, in particular the jalapeño and cheese with a snappy casing and a definite kick. Sides include a longhorn cheddar mac ‘n’ cheese and baked beans with burnt ends that have a touch of sweetness.
