Hillbilly Bar B Q Restaurant Review: We can thank Hillbilly Bar B Q proprietor and Kentucky native Larry Wyatt for doing a lot to reinvigorate the New Orleans barbecue scene. Wyatt infuses pork shoulder, beef brisket, spare ribs and even hamburgers with glorious smoky flavor. Hillbilly's side dishes are unusually inspired, especially the cumin-spiced cabbage slaw and the cold mashed potato salad that is a hybrid between traditional German and Cajun. Speaking of Cajun, try the smoked boudin. Smoked chicken salad sandwiches and “Hawg Dawgs” --- tidy hot dog, chili and cheese sandwiches --- are two rarer treats, and two of our favorites. Best of all, if you want to take some home, you can buy pork, brisket or ribs by the pound. Delivery is available in the Harahan area. |
