Whether you're vegan or just like to eat seasonal, boldly flavored cuisine, broaden your palate at the breezy Horizons, where modern vegan fare is the order of the day. Chef-owner Rich Landau’s kitchen alchemy transforms soy, seitan and local vegetables into lofty indulgences. Hung with bright, local art, the bi-level restaurant includes a downstairs lounge and a comfortable bar. The menu changes often, but if you're lucky the warm maitake mushroom salad will be featured, garnished with shaved rutabaga, pistachio vinaigrette and grilled green onion. The Vietnamese bruschetta blends lemon grass-glazed tofu with a zesty cilantro mint relish, and the golden beet panzanella salad, with its smoked tofu and roasted vegetables, redefines the Italian staple. Nutty seitan soaks up a barbecue sauce atop Yukon mash. Co-owner Kate Jacoby is both general manager and pastry chef, whipping up ancho-coconut ice cream that you'd swear was dairy-based, but is not.
