After opening and manning operations at Beechwood in Venice, husband and wife team Nick Roberts and Brooke Williamson decided to start their own venue in Redondo Beach. Hudson House, named after their young son, is a casual somewhat industrial looking space along a very quiet stretch of Pacific Coast Highway. There are several avant-garde dishes on order, though as a whole, the menu reads more like eclectic bistro than traditional gastropub. Dishes not to be missed include the sweet brown sugar pork ribs, the heirloom tomato and watermelon salad, and the signature pretzel burger---a large beef patty on a pretzel bun with grilled onions, arugula, bacon and Jarlsberg cheese. Fried cauliflower fritters are a good addition to any table, crunchy on the outside and surprisingly tender on the inside. For dessert, there is a gut-expanding fried twinkie. Though the bar offers some fresh-ingredient cocktails and predominantly European wines, the real star is the beer list, sorted by country of origin and style of brew.
