: You can't get any more Basque than this. Xavier Isabal is a true Basque chef, and he shows it off in his anchovy salad à l'escabèche, perfectly prepared and seasoned fish, Basque cassoulet with kidney beans, and wonderful homemade charcuterie, all available on the set menu. The wine list is fairly eclectic, with a good selection of local products.
