After more than 25 years, one may think French-trained chef Janos Wilder might be fresh out of ideas, but Wilder continues to wow guests with food that you’ll dream about long after the last bite. A committed proponent of making the most of local ingredients, Wilder uses seasonality, sustainability and a handful of whimsy to create a wondrous experience no matter the time of year. In autumn, if you’re lucky, Wilder might turn out an apple-walnut relleno. During the summer, perhaps it will be chilled avocado soup with a fresh tomato slice floating in the middle topped with a large portion of lump crab meat. Even a simple fig is transformed into a heavenly nosh under his expertise. The tasting menu, which we highly recommend, can take you from braised short ribs with feijoada beans to poached pears with cinnamon ice cream and cajeta, a lovely caramel sauce. Well-paired wines complete the evening. Located on the grounds of The Westin La Paloma Resort & Spa, the elegant but comfortable dining room offers some of the best views of the city lights, making a night at Janos a most romantic experience.
