JEFFERSON IS TEMPORARILY CLOSED. After years of running popular but humble Pan-Asian Café Asean just down the block, chef-owner Simpson Wong has reinvented himself as a sure-handed upscale kitchen star---just don't call his food fusion. Wong calls his menu New American, and his sleekly designed restaurant's name couldn't be any more true-blue than it is. But Wong, who is Chinese Malaysian, prepares dishes that reflect a U.S. that today has a multicultural pantry. Buttery hamachi paired with crisp pear slices gets a Mediterranean treatment of capers and olive oil, apple sweetens goat cheese pot stickers, and lamb chops get a twist with a shiso-mint sauce. This is one old dog that has learned a lot of new tricks.
