Tomato-based yet smoky, sweet with brown sugar but tart with vinegar, the sauce turns most any meat into a satisfying entrée. Jones’s joints are casual affairs, with order-at-the-counter service for eat-in and take-out orders. Staff is courteous and forthcoming when there’s a wait for meals, and side dishes here are as good as the main event. Collard greens? They’re really a delivery system for hunks of salty pork and a peppery broth in which hints of vinegar remove the greens’ bitterness. Cornbread comes in generous pieces, while coleslaw and potato salad stand up well at picnics and for take-out.
