Josie Le Balch and her husband, general manager Frank Delzio, have worked at some of the Southland's most prestigious and hip spots, including Saddle Peak Lodge and the now defunct Beach House. Le Balch combines her French cooking heritage, her multicultural exposure and her years of practice with fish and game to deliver sophisticated cuisine with solid dishes. You get a balanced menu that will endure, but also the promise of daily specials based on her mood or market availability. Appetizers like sautéed frogs’ legs over celery root purée or the bacon-wrapped grilled quail will get you started. How about a Lake Superior whitefish, a Moroccan-style tagine of beef short ribs or a buffalo burger topped with foie gras to continue her game tradition?
