Kabuto is ground zero for sushi lovers in San Francisco. Whether early or late, aficionados line up to get in to sample the talents and personality of master sushi chef Sachio Kojima. In our experience, the sushi here has been uniformly excellent-immaculately fresh and meticulously prepared with the kind of grace and showmanship few other sushi chefs match. The selection of fresh seafood and crustaceans is outstanding. Among the exceptional offerings is the white tuna topped with flying-fish roe and a raw quail egg nestled in the middle. A full Japanese menu is also available.
