Japanese for “wind,” cushy, hip Kaze takes a stylized approach when it comes to Japanese cuisine. We are quite impressed with the concept of sushi with toppings, an idea that to a purist might seem odd. But when it comes to stacking flavor on flavor, this idea has tasty merit. For example, amberjack might be topped with crystallized ginger. Tuna could be dressed in shiitake mushrooms that have been stir-fried with butter and black pepper sauce. And it doesn't stop there. Nigiri features tuna, yellowtail, salmon and unagi, each of which gets a topping of an interesting substance. Among the most distinct finds is black cod served on a bed of bok choy and dressed with bittersweet chocolate, flecks of almond and fresh strawberries. But bass tempura with pineapple sauce is thought-provoking, too. The four-course, seasonally inspired menu is always impressive; it features the likes of breaded Berkshire pork topped with mozzarella and Japanese curry and Kobe nigiri torched with garlic butter.
