Mark Singer, a French-trained American broken-in by the best of the Parisian brigade, lends a festive feeling to this bistro where Eric Fréchon shined before his return to the Bristol. The à la carte menu, complemented by daily blackboard specials, offers a wide choice. For example, the haddock with the tomato glaze and oysters, sage-infused cod "crumble," wild duck with saffron apples and beets, banana pastry with almond and carambar cream. Inspired by whatever is available at the market, this cooking is honest and vigorous. Prix-fixe menu: €31 and €36.
