Peruvian chef Gaston Acurio’s first foray onto the New York dining scene was highly anticipated. Set in the old Tabla space on Madison Square Park, his restaurant’s focus --- as the name suggests --- is ceviche. First-timers should opt for the tasting platter, which includes yellowfin tuna, salmon, shrimp and warm-water fluke. But the menu is so extensive, don’t limit yourself to just ceviche. Lomo saltado, hanger steak with purple potatoes and quail eggs, is a winning entrée, particularly for hearty eaters, and there’s creamy chicken stew and inventive squid ink rice to consider too. Plenty of South American wine is on offer, as well as selections from Spain and California, but opt for a pisco sour or pisco punch to wash down your Peruvian fare. End your meal with the very good sweet potato beignets.
