Vegan tapas bar Ladybird, a project from restaurateur Ravi DeRossi, gets creative with vegetable charcuterie like beet "chorizo." Other creations from chef Daphne Cheng might include coconut croquetas with bell pepper béchamel, orange romesco and jalapeño; French lentils with smoked cauliflower, grape relish, honeydew and miso butter; and saffron semifreddo with coriander peach, almonds and thyme crystals. Cocktails take similar cues, with options like the Dodo Slushy with avocado, sparkling wine and shiso syrup.
