To try the cuisine of Russell Jackson, the chef behind the underground supperclub SubCulture Dining, once meant learning special pass phrases and showing up at secret locations. But the "Dissident Chef" has now brought his signature style to a brick-and-mortar restaurant on Pier 5 near the Ferry Building. The industrial-style space features waterfront views from a covered outdoor patio, and a chef's counter for diners who prefer to watch the action in the exhibition kitchen. Much of the market menu changes daily "due to Mother Nature's whims," but dishes have included corn pudding and popcorn emulsion; squab two ways with grilled Basque peppers and fingerling potatoes; and seared white bass with tomato, citrus, black chickpeas and lavender. Sweets have ranged from buttermilk panna cotta to a peach and goat cheese tart to TCHO bread pudding with Dewar's crème anglaise.
