Without losing his way, Stéphane Jégo, taught at the Yves Camdeborde school, unfurls his line of Southwestern cuisine, at once appropriate for bistro and gastronomic settings. On the plate, that translates to lamb's foot risotto, fresh roasted cod with andouille sausage and bacon, thyme-breaded coeur de boeuf tomatoes, and free-range rabbit fillet (lunch menu at €42 and dinner menu at €78).
