L’Appart by Air Food is a quirkily charming, atmospheric, contemporary French bistro in DTLA (formerly in Santa Monica) from owner Marc Moubarak and chef Thierry Babet. The kitchen is devoted to conscious practices that include a low temperature cooking process, use of local and organic ingredients, and partnering with ethical producers. The seasonally changing menu features grilled baby romaine with praline nuts, hazelnut cream and shaved Parmesan; escargots de Bourgogne; beef tartare; duck confit; and lobster and arugula risotto. A “water bar” offers 55 varieties of bottled water from Croatia to New Zealand.
