Openings

Proof Tavern has opened in the Montelago Village at Lake Las Vegas. The 6,440-square-foot space offers a bar, dining room and patio, and a second floor and bar for private events. The venue is outfitted with 15 video poker machines and marks the return of gaming to Lake Las Vegas, which has not had any gambling options since 2013. The executive chef is Jon Littleton, who was formerly with Mario Batali’s B&B Burger & Beer, B&B Ristorante and Carnevino, and prior to working on the Strip was executive chef of the Black Pepper Grill, in the same building that is now home to Proof Tavern. Littleton describes his menu offerings as “simple food done right” and his kitchen turns out American comfort fare and classic favorites such as fried rock shrimp with Thai chili sauce, Mediterranean-style hummus, crispy pork belly bites with crumbled blue cheese, BLT flatbread and Kansas City-style ribs. Chica has opened at The Venetian Las Vegas “Top Chef Masters” chef Lorena Garcia and John Kunkel's team from 50 Eggs have launched The Venetian resort's first Latin concept, Chica, which also marks the first time that a major Strip eatery has featured a Latina head chef. Opened on Mother’s Day, May 14, 2017, the restaurant is located just off of the casino in the former home of DB Brasserie. No expense was spared to demolish and make over the interior of the space. The new restaurant features a large grill where all the meats are prepared in a variety of ways distinctive to particular nations. Chef Garcia’s dishes are inspired by menus in Venezuela, Peru, Brazil, Mexico and Argentina, and include a lentil and quinoa bowl with shrimp, cherry tomato and guayanés cheese; churrasco with herb chimichurri and shoestring fries with a creamy huancaina sauce; and rice pudding topped with dried apricot, candied pineapple and pomegranate rum sauce. Costa di Mare Brings “A Night at the James Beard House” Menu to Las Vegas
Costa di Mare at Wynn Las Vegas is offering executive chef Mark LoRusso’s menu that was showcased recently at the James Beard House in New York. Served nightly and priced at $195 per person, the tasting includes sea urchin mousse with olive oil and chives; crudo tasting of cuttlefish “cappellini,” with prawns, Sicilian amberjack and palomita; butter-poached imperial langoustine with spring peas; grilled octopus with crispy potatoes, olive oil-poached fennel and olives; Sardinian red mullet, bottarga and risotto with mussels; and line-caught Mediterranean turbot with butter-poached leeks and Osetra caviar. Jean-Georges Steakhouse to Remodel
MGM Resorts International has announced that Jean-Georges Steakhouse at Aria Resort & Casino will close after service on Monday, May 29, 2017, for a remodel. During the closure, steakhouse menu offerings will be available at Aria restaurants BARDOT Brasserie, Carbone and Sage. Details on the remodel will be available in the coming months and Jean-Georges Steakhouse will reopen in early July. Buddy V’s Expands Brunch to Saturdays
Buddy V’s Ristorante at The Venetian/Palazzo has expanded its Buddy’s Family Brunch experience to Saturdays as well as Sundays, from 10:30 a.m.-2:30 p.m. Menu highlights include peel and eat shrimp, a carving station with maple-glazed ham, mac n’ cheese carbonara, chicken Parmesan, orecchiette and Italian sausage, panettone french toast, vegetable frittata, egg scrambles and warm crespelle with toppings. During the brunch on Sundays, live music is performed by The Fabulous Baker Boys. The brunch is priced at $34.95 per person/$14.95 per child under 10 plus tax and tip. Bottomless sangría, Bloody Marys, Bellinis, Bloody Caesars, domestic beers and wines by the glass are available for an additional $14.95 per person. Herringbone at Aria Resort & Casino has revamped its weekend brunch, held Saturdays and Sundays from 10 a.m. to 4 p.m. The brunch now features interactive food stations: The Salt, Brine & Poke station with oysters, peel and eat shrimp, fish and shellfish; The Carved, Cut & Shaved station with an ever-changing selection of meats; The Farm Basket offering fresh-picked produce from local farms and assorted artisan pastries, fresh juices and blended fruit and vegetable smoothies (with the option to upgrade with premium vodka); The Kid in You station with cereals, candies and pastries; and the From the Kitchen station highlighting chef Geno Bernardo’s favorite brunch items such as chilaquiles and orange ricotta chocolate chip pancakes. The all-you-can-eat package is $59 and an all-you-can-drink package for bottomless Bloody Marys, mimosas and Bellinis is an additional $35.
