Red Plate will open this summer at The Cosmopolitan of Las Vegas. It’s a new dining concept that celebrates traditional Chinese cuisine in a refined setting. The culinary vision will be led by chef Yip Cheung, an expert in multi-regional Chinese cuisine who formerly helmed the kitchen at The Cosmopolitan’s high-end gaming parlor, The Talon Club. Cheung will utilize traditional Chinese techniques and preparations to present an authentic Cantonese menu with hints of modern inspiration, with highlights including roasted meats, Chinese hot pot and handmade dim sum. The restaurant’s design will feature black metal and brass detailing, abstract landscape wallcovering, rich tones of deep red and black, luxurious fabrics, polished marble and traces of gold. Red Plate will be located on the third level of The Cosmopolitan’s Boulevard Tower adjacent to Scarpetta and Beauty & Essex. Red Plate, The Cosmopolitan of Las Vegas, 3708 Las Vegas Blvd. S., Las Vegas, NV 89109, no phone.
