Openings

Coconuts Beach Bar & Mexican Grill has opened at Town Square, featuring a beach vibe and fresh Baja Mexican food. The four M’s of delight (margaritas, milkshakes, mojitos and martinis) are celebrated as if every day is Cinco de Mayo. Theme nights include Rebel Rush College Night on Thursdays at 10 p.m., with rotating DJs, drink specials and $1 tacos on the patio until closing, and Go Loco Fridays Ladies Night, with an open bar for ladies from 10 p.m.-midnight. Every party of 10 or more celebrating a special occasion receives a complimentary four-foot burrito, piñata and margarita for the guest of honor. KJ Kitchen Dim Sum & Seafood Restaurant has opened at the Rio All-Suite Hotel & Casino. The 4,600-square-foot location seats up to 350 people, and is open daily from 10 a.m.-5 a.m. The menu features traditional Chinese and fresh shrimp, lobster, crab and giant clam dishes. A customary tableside dim sum experience is served during lunch. Head chef Loy Lee, who was born and raised in China and honed his craft in Hong Kong, is joined by chef Pui Wong, who has more than 30 years of restaurant experience working in China and Hong Kong. Anthony’s Gourmet Burgers & Brews has opened at the M Resort Spa Casino. The restaurant, located adjacent to the lobby where the Lobby Bar was formerly situated, features a menu of unique, homemade burgers paired with craft beers. Billed as burgers for grown-ups, toppings include stout-braised short ribs and spiced pastrami. The menu lists a suggested craft beer pairing for each burger, such as the barbecue-spiced burger with roasted hatch chiles, pepper jack cheese and fried jalapenos paired with Firestone Union Jack IPA. The restaurant is open nightly for dinner --- both indoor and outdoor dining are offered --- with seating for up to 90 guests. Sirio Ristorante Offering Five-course Menu During March
Executive chef Vincenzo Scarmiglia at Sirio Ristorante at Aria has created a five-course menu celebrating the legacy of Tuscany. Courses include Maine lobster salad with artichokes, asparagus and avocado; potato and Gorgonzola cheese-filled ravoli topped with roasted pear purée and Nero D’Avola syrup; Dover sole filet and spinach; pan-roasted lamb porterhouse with a rhubarb demi-glace; and a dessert trio of rum baba cake filled with a pastry cream, fruit minestrone and pabana sorbet. The five-course menu will be served throughout the month of March at a cost of $89 per person. Dragon Noodle Co. Offers Three-course Menu Paired Beers During March
Dragon Noodle Co. & Sushi Bar inside Monte Carlo will offer a three-course prix-fixe beer pairing menu for the entire month of March. The menu, created by executive chef Patrick Fong, includes a spicy tuna roll with Sapporo; salt and pepper calamari and vegetable spring rolls with Sierra Nevada Brewing Co. Pale Ale; and a choice of sweet and sour chicken, kung pao chicken, beef with snow peas or vegetable chow mein with Pyramid Haywire Hefeweizen. The menu is available for parties of two or more, and the cost is $28 per person. Three Square’s Las Vegas Restaurant Week February 27-March 4
Three Square’s first ever spring edition of Las Vegas Restaurant Week will take place February 27 through March 4. Each of the more than 70 participating restaurants will create a multi-course prix fixe menu offered at one of the following price points: $20.12, $30.12 or $50.12. A fixed portion of the proceeds will benefit Three Square, Southern Nevada’s only food bank. A complete list of Las Vegas Restaurant Week participants and menu details can be found at www.helpoutdineoutlv.org. The site allows diners to search by type of cuisine, restaurant location or donation amount.
 
Kerry’s Gourmet Burgers Launches Burger & Shake of the Month Combo
KGB: Kerry’s Gourmet Burgers at Harrah’s Las Vegas has launched a monthly burger and shake special, crafted by chef Kerry Simon. The combo creations are only available for one month, and are priced at $18. February’s special is a tandoori-marinated chicken burger with mango chutney and fresh mint, accompanied by the mango chili shake spiced with sweet jalapeno syrup. In March, the pairing will be a mushroom Swiss turkey burger with mixed greens, tomato, roasted portobello mushroom, Swiss cheese and pesto mayo matched with a cheesecake milkshake. The burgers, served with fries, may be purchased separately for $14, along with the shakes for $6. Chef Shuffle

David Middleton has been appointed executive chef at Marché Bacchus. Middleton formerly served as executive sous chef at Scarpetta at The Cosmopolitan of Las Vegas, and chef d’Tourant at the former Alex at Wynn Las Vegas. Middleton has also been joined by sous chef John Courtney, whose resume includes work in the kitchens of RM Seafood and Born and Raised. Tableau at Wynn Las Vegas has closed and has reopened as the Tower Suites Café. The eatery's panoramic windows overlook the Wynn pools and gardens, with both indoor and outdoor seating. The menu features coast-to-coast American favorites, such as braised pork belly sliders, day boat scallops and a grilled artisan cheese sandwich. Breakfast and lunch are served daily, as well as an afternoon tea, and tapas and desserts in the evening.
