Openings

Slated to open December 16, ARIA Resort & Casino at CityCenter will offer a myriad of dining options. Chef Shawn McClain, who already has Spring, Green Zebra and Custom House in Chicago, will be opening Sage, a contemporary American restaurant which will take some influence from his previous three restaurants and highlight farm-to-table produce and sustainable seafood. Modern Japanese pioneer Masayoshi Takayama will open his more casual Bar Masa concept along with Shaboo, an elegant take on Japanese shabu shabu dining. There will also be new venues from veteran Vegas restaurateurs Sirio Maccioni (Sirio Ristorante), Michael Mina (American Fish), Jean-Georges Vongerichten, Jean Philippe Maury (Jean Philippe Patisserie) and Julian Serrano (Julian Serrano). Spago Names New Partners
Continuing with its philosophy of offering opportunity to grow within the company, the Wolfgang Puck Fine Dining Group has named executive chef Eric Klein and general manager Oded Talmor associate partners of Spago Las Vegas. For more than a decade, Klein has been recognized and honored for his creative culinary skills, using his European background and influences to craft innovative menus and enhance the true flavors of ingredients. Klein joined the group in 1997 when he was named sous tournant for Spago Beverly Hills and later promoted to executive sous chef. Klein left Spago in August 2003 to take on his first business enterprise and head chef position at Maple Drive in Beverly Hills, but returned to Las Vegas a few years later to launch SW Steakhouse at the Wynn Las Vegas. After taking his talents to Bellagio, as executive chef of Fix, Klein rejoined the Wolfgang Puck Fine Dining Group in 2007 as executive chef at Spago Las Vegas. Oded Talmor follows Puck's philosophy of genuinely and humbly satisfying guests' needs and pampering locals and tourists alike to ensure each visit to Spago is memorable. Talmor became a part of the Wolfgang Puck Fine Dining Group in 2003 when he joined Postrio as a manager. He was later promoted to assistant general manager and remained at Postrio until 2005 when he was promoted to general manager at Spago. A native of Israel, Talmor relocated to Las Vegas in 2002 and completed his Bachelor of Science degree in Hotel Administration at the University of Nevada, Las Vegas. Roy's Winter Prix-Fixe Menu
Roy's is offering a winter prix-fixe menu, which will be available through March 31. For a first course, diners have the option of Pulehu style "Kalbi" sirloin, kimchee and edamame fried rice; seafood chowder, shell and fin fish; or crispy chicken katsu salad with creamy Asian ranch dressing. Choices for the second course include blackened shrimp with creamy polenta, garlic spinach, lemon and herb caper sauce; flat-top grilled salmon steak with wasabi and shiitake pan sauce; braised pork pot roast with creamed corn sauce; and "Hawaii Kai" style beef short ribs. For dessert, guests decide between a warm banana crème brûlée tart and Roy's Melting Hot Chocolate Soufflé. The cost is $35 per person (tax and gratuity not included). This menu is available at the Roy's locations at 620 E. Flamingo Rd. and 8701 W. Charleston Blvd.
