Openings

Las Vegas-based The Light Group will take over the leases of three of Mandalay Bay Resort & Casino’s restaurants in November, with Red, White & Blue, Red Square and China Grill all closing on November 18. Red, White & Blue will be replaced with Citizens Kitchen & Bar, a casual American bistro by corporate executive chef Brian Massie. Set to open in January, the menu will be available 24 hours a day and will include American favorites such as Maryland blue crab cakes, southern fried chicken and bacon-wrapped meatloaf. The Light Group will also relaunch Red Square, which will serve easy-to-share contemporary American fare infused with Russian influences, such as bacon Brussels sprouts and tuna tartare. Red Square will reopen in late December after upgrades to its kitchen, and Akira Back, the chef behind Yellowtail Japanese Restaurant & Lounge at Bellagio, reportedly is designing a Japanese concept in the China Grill space. Rosemary’s Restaurant, which closed in July 2011 after a dozen years of being recognized as one of Las Vegas’ best off-the-Strip gourmet restaurants, is making a return in the form of Rosemary’s Café. Michael and Wendy Jordan’s upscale eatery and bar with terrace dining will be located within the Las Vegas Shakespeare Company’s renovation at the Reed Whipple Cultural Center on Las Vegas Boulevard North in Downtown Las Vegas. Construction is slated to break ground in early 2013.
 
McCall’s Heartland Grill has opened at the north end of the Stratosphere Las Vegas Hotel & Casino’s casino floor, serving hearty Midwestern comfort fare. Specialties include braised beef short rib sliders, blue corn-crusted lollipop chicken wings, PB & J crostini enlivened with bacon, and coffee-rubbed center cut New York strip with creamy blue cheese butter. The 153-seat dining area includes a private dining room that can accommodate up to 20 guests. A cozy “cowboy chic” atmosphere features intimate booths, stacked stone, natural woods and a full-service bar. McCall’s is open daily for lunch and dinner. Javier’s Mexican restaurant is now open at Aria Resort & Casino, serving dishes from generations of co-founder Javier Sosa’s family recipes. The 9,000-square-foot restaurant features a circular main bar, lounge, two dining rooms seating 280 guests and a private dining room with seating for 20. The décor includes the world’s largest piece of chainsaw art, with panels illustrating the Mayan Creation myth blended with modern Mexican history. This newest Las Vegas location joins two other Javier’s locations in Southern California, and one in Los Cabos, Mexico, with a regionally influenced menu of seafood, steaks, chicken and a selection of vegetarian dishes. Libations include hand-shaken, made-to-order margaritas; the signature “tequila tree" holds a massive collection of the world's most sought-after bottles. Just on the heels of opening his first Vegas restaurant (Gordon Ramsay Steak opened in May), now two more eateries on the Vegas Strip from the celebrity chef are in the works. Gordon Ramsay Pub & Grill will open shop by the end of the year at Caesars Palace in the space formerly occupied by Bradley Ogden, and will offer 40 beers on tap and British pub food with a contemporary twist. Opening in early 2013 at Planet Hollywood Resort, Ramsay’s Flame Burger will be a huge 250-seat 5,660 square-foot burger bar that will cost $2.5 million to build, and will feature an open kitchen, sports and entertainment viewing, a keg room and self-serve beer taps.

Half Off Cocktails During Happy Hour at Comme Ça
Comme Ça at The Cosmopolitan has introduced a daily happy hour, offering half off on its 18A cocktails and an array of specialty dishes. The menu includes 17 food items, such as steak tartare, charred calamari, a burger with aged cheddar and french fries, and crème brûlée with Tahitian vanilla. In honor of National Breast Cancer Awareness month, Central Michel Richard is offering "Go Pink" desserts and cocktails to support Susan G. Komen for the Cure. The Pink Napoleon dessert ($8) presents puff pastry filled with raspberry pastry cream while the Blueberry Smash cocktail ($12) features muddled blueberries, blueberry vodka, lemon juice and sparkling wine. Seventy-percent of sales of the "Go Pink" menu items, during the month of October, will be donated to Susan G. Komen for the Cure. Chef Shuffle

French-trained Stephane Chevet has left his executive chef post at Shibuya at the MGM Grand Hotel & Casino, a position he had held since opening the Japanese restaurant in 2004. Station Casinos has appointed Bradley Manchester as executive chef of Green Valley Ranch, where he will oversee nearly 350 culinary employees and eight restaurants at the resort. Manchester has worked with renowned chefs in Las Vegas, San Francisco and New York, including Alex Stratta, Julian Serrano, Gary Danko and David Burke. Prior to joining Station Casinos, Manchester was chef de cuisine and part of the opening team at The Cosmopolitan Las Vegas, developing and overseeing six of the resort’s food venues.
