Dining room at Le Bistro, Lighthouse Point, FLAmbience is homey and the French-inspired food accessible (no foams, gels, exploding Pop Rocks, etc.) at this neighborhood bistro, but the wife/husband team of Elin and English-born chef Andy Trousdale manage to combine the friendliness with a forward-thinking concept of healthy eating. This incorporates some "spa cuisine" dishes totally free of butter and similar sinful ingredients (like cauliflower roasted with olive oil, garlic, onions and raisins), but mostly just depends on serving nutritionally balanced meals with smaller portions---at correspondingly smaller prices. Dishes also depend largely on local and organic ingredients. Recommended specialties include bee pollen-crusted goat cheese with almonds, organic honey, endive, lavender and aged balsamico; haricots verts beignets; an unusual smoked paprika-spiked cream of wild mushroom soup with house-made Parmigiano-Reggiano cheese straws; sea bass "crème brûlée" (i.e. caramelized on top, on a pool of light Champagne cream sauce; it's served with fingerling potatoes and spinach hash); and intensely flavored fresh fruit gelatos. A frequent deal: a $35 five-course dinner ($50 with a bottle from the thoughtfully chosen wine list).
