Keep an eye out for this restaurant, as its name is not noticeable from the street. Look for a black coat of arms made up of antlers and fish. Step through a dark entranceway with low ceilings and then into the bar-salon for a drink before dinner. The windows encased in the stone walls, the halogen lamps hanging over each table and the comfortable upholstered chairs are a nice match for the refined crowd. Chef Claude Pelletier is one of the most respected chefs in the city, and with good reason. Try the risotto with suckling pig and foie gras, the surf ‘n’ turf dish called "La chasse et pêche" or the seared scallops in fennel purée and a vegetable panache. Let the knowledgeable and friendly staff pair your meal with a wine. The no-nonsense list consists of fish-friendly whites, light-bodied reds and hunter-friendly reds --- many of them organic, a dozen available by the glass. During the summer season, Chasse (as the locals call it) offers chichi al fresco dining at the Château Ramezay (a historic site and museum) across the street.
