Jacques Le Divellec no longer requires an introduction. He travels around the world as a culinary advisor for Servair catering group, for international airlines such as Air France and others; and is also the author of numerous books dedicated to seafood. A kind-hearted man, Le Divellec creates a true cult to fish. His restaurant on the Esplanade des Invalides somehow has become the annex of the National Assembly and a salon for businessmen. They cherish the lobster à la presse, served with a slightly creamy lobster fumet, rice and truffles. Other favorites are the six "specials" (oysters), hardly boiled with sea lettuce; scallops in thin slices, quickly fried with panned duck foie gras; or a chopped mulet tartare with lime and virgin olive oil. His chocolate and mint soufflé by the plate and crêpes Suzette sprinkled with Grand Marnier and orange and lemon zest rubbed sugar are beautiful ways to finish the feast.
