Le Pergolese Restaurant Review:
Stéphane Gaborieau, who hails from Lyon and has been awarded with a title of Meilleur Ouvrier de France, bestowed on the best artisan for their skills, reigns over the stoves of this fine dining place. His dishes are classics, based on seasonal products with a hint of Mediterranean taste. The marriage between the cherry tomato, the celery turnip and the scallop deserves kudos, as does the calf sweetbread sided by a vegetable risotto, smooth and thick. Cast in the same mold, the saddle and the rack of lamb with semolina and juice à la Provencal, and the warm saffron pancake along with a prune sherbet, are worth the dégustation. The lunch menu, with two glasses of wine included for € 48, is a bargain.
