Le Sergent Recruteur Restaurant Review

: This former cheap spot dedicated to tourists has been duly refurbished with a modern and striking décor. Several dining rooms spread over the place, including the bar just after the entrance. There you can sit at the counter and enjoy good value for your money with the lunch menu at €35. Its content is determined by the chef, according to his mood and his catch at the market. Antonin Bonnet, who worked for six years at The Greenhouse in London, favors creativity thanks to rare ingredients, subtle combinations of tastes and sophisticated textures. Bread is homemade and the vegetables are certified organic, supplied by a French farm. In addition to the appetizers --- carrot shavings, a pumpkin soup, and a rhubarb and apple compote --- make yourself a treat with the swordfish chops from Saint-Jean-de-Luz with zucchini flower tempura and fruity capers, and a perfectly cooked and cep-coated woodpigeon with carrot purée, celery and chestnut. To finish it off, a complex dessert is brought out in a glass. A gavotte is laid in the bottom, topped by diverse sweet layers, including chocolate mousse, chestnut cream, rum jelly, hazelnut slivers, green tea and fig sherbet and Chantilly cream. Two dozen wines by the glass, notably a red Palistorti di Valgiano 2010, add to the fantastic appeal of the place.
