: You might dine in the former chapel of a seventeenth-century convent in a prettily decorated dining room with stone walls that speak out their history. Chef Jean-Jacques Bissières turns a dandy sauce and masters his cooking times to perfection. Spending a minimal amount of euros, including wine, you can make a superb culinary trip between Provence and the Southwest. Try dishes like crab ravioli and praline crêpes. Bissières is a candid chef with a steady professionalism.
