Les Amis Restaurant Review:

In this city obsessed with all things new, the timelessly elegant Les Amis, founded in 1994, has retained its lofty position as a Singapore French fine dining institution. It is widely, and we think rightly, credited for putting Singapore on the world gourmet's map. Try the lightly smoked eel delicately laid upon a rich pork crisp, then dappled with horseradish and Dijon mustard emulsion. Ingredients burst forth as well in the Hungarian goose foie gras with cherries and truffles in balsamic reduction served on apple bread. We could have eaten the Maine lobster with chanterelles and fluffy potato gnocchi all night, but were glad we held back when the char-grilled beef tenderloin arrived with hearty sides of sweet corn, broccolini and thick slabs of truffled french fries. We still recall the fatty meat under the crispy skin of the restaurant’s Spanish suckling pig that requires a day’s advance notice and a minimum of four diners. Finish with the deconstructed lemon tart, a harmonious ode to the citrus fruit that looks nothing like the expected slice or pie. At any one time, Les Amis stocks about 2,000 labels of wine --- it's one of the few places in town to offer wine guéridon service. This is the restaurant to impress and be impressed.
