L'Escargot 1903 Restaurant Review: Open since 1903, this bistro is perched on the hills of Puteaux, a stone’s throw away from the skyscrapers of la Défense. It is presided over by the jovial Hakim Gaouaoui, who had the good idea to establish a partnership with Nicolas Mouton and Cédric Delvart, the pair responsible for the success of La Fourchette du Printemps restaurant in the 17th arrondissement. Delvart, who helms the stoves, delivers a simple cuisine, without flourishes and focused on quality products. We like the escalope of pan-fried foie gras enhanced with chestnut cream and the hearty veal chop dressed with pepper sauce and sided by chanterelles and french fries. Desserts are accomplished, such as the rum baba and the lemon tart. Many wines are available by the glass, including a Crozes Hermitage 2008 from the Domaine de la Ville Rouge.
