 The signature restaurant at L'Ermitage Beverly Hills features Italian-Asian cooking of executive chef Joseph Elevado, formerly of Nobu Los Angeles and Nobu Las Vegas. Sea urchin and fluke sashimi, a 62-degree egg and black truffle, snow crab tempura, free-form oxtail ravioli, and seared Wagyu flatiron steak are a few of the creations offered.
