 Previously, Lounge ON20 was primarily a high-end nightclub attracting the young hip set, offering only a handful of gourmet bar snacks. Now, the menu is leading the Sacramento dining scene in a whole new direction with its focus on molecular gastronomy. Appetizers and entrées are available, but for a varied experience, we recommend sharing a number of small plates. One hit was the shrimp ceviche with mango "yolk," the sweet purée, once broken, offsetting the tang of fresh lime. Another was the lime cured hamachi with compressed apple, chili "pearls" and soy gel, each one-bite morsel encapsulating all the flavors of a main course. The ricotta gnocchi’s delicate marshmallow-like texture was a nice vehicle for earthy truffle butter. Desserts are no less artfully crafted: white chocolate soufflé cake was light yet decadent, complemented by a full-bodied chocolate balsamic reduction. The décor has also taken a new direction, with white upholstery, a "floating" indoor firepit, ambient purple light and white, flowing curtains creating an otherworldly atmosphere.
