Brooklyn chefs Sara Kramer and Sarah Hymanson are behind Madcapra, a falafel stand in Grand Central Market. Available as a sandwich or salad, the falafel comes in four variations: red (with tomato, cabbage, pickles, tahini and basil), green (with cauliflower, pickled fennel, labneh, cilantro and mint), orange (with carrots, spinach, pickled hot peppers, walnut-yogurt and dill) and yellow (with feta, harissa, cucumbers, pickled sweet peppers and parsley). Indecisive patrons can also "Go Big" and sample the entire menu for $33 (for two people).
