Irma's is known for its ceviche of shrimp, white fish, crab claw and squid marinated in a citrus mixture. Classic lomo saltado offers stir-fried sirloin strips with onions, cilantro and tomatoes, while aji de gallina combines shredded chicken in a creamy walnut and Parmesan sauce. House-made desserts vary, with such offerings as vanilla crème brûlée, corn custard, pineapple cake with icing, and Peruvian butter cookies filled with dulce de leche.
