Dani Garcia, who runs a much-lauded restaurant in Marbella, Spain, brings Spanish small plates to the Big Apple. With an entire page of the wine list dedicated to educating the diner about the eponymous wine, try a few glasses of Manzanilla or Amontillado from the Jerez region of Spain. Seemingly simple staples are elevated just a bit, on every dish. The pan con tomate, for example, suggests more of a steak tartare, with a mango dollop atop, recalling the standard soft yolk. Octopus salad is sweet and tangy one moment, with a low heat the next, thanks to apples, oranges and a pimenton oil. While many head straight to the paella, the suckling pig has notes of bacon and citrus, over a sweet butternut squash, and crispy, fatty skin. For dessert, creamy rice pudding meets fluffy yet crisp bits of raspberry cotton candy in another dish that seems straightforward but ends up being anything but.
