| The elegant townhouse on leafy 45th Street in University City must be in some kind of culinary vortex --- despite changing chefs and owners, things just get better. Formerly a launching pad for Michael Solomonov (now at Zahav) and Erin O'Shea (Percy Street Barbecue), Marigold Kitchen is now owned by chef Robert Halpern, alum of storied eateries including Moosewood in upstate New York and Coyote Café in Santa Fe. Here, the Villanova native's focus is on eclectic American cuisine fashioned with locally sourced ingredients and a dash of snazzy molecular gastronomy. White bean cappuccino arrives with bay leaf "bubbles"; a three-hour sous vide egg is topped with a crisp of fried hollandaise; wild salmon is adorned with baby spring vegetables and topped with a rose-cardamom foam. Although the menu changes at the chef's whim and as the seasons dictate, if you're lucky a version of the three preparations of beef will be available, seared Wagyu tenderloin, braised Painted Hills short rib and a Wagyu tartare. Each plate is artfully composed, with as much attention paid to details of color and texture as to the marriage of inventive flavors. Desserts are equally creative --- ginger ice cream sandwich with candied fennel garnish anyone? Halpern is having fun, and it shows. BYO. |
