Clad in traditional dress, May Siriyan, wife of chef-owner Chaiwatt Siriyan, typically choreographs the flow of cooks, waiters and customers here with a dancer's grace. Diners' taste buds will be dancing too, since Chaiwatt turns out some of the city's most vivid Thai food. The deep-frying at this perpetually crowded Sunset restaurant is first-rate, as the greaseless corn cakes and spicy angel wings attest. Try the green papaya salad, its fiery jolt offset by lettuce leaves, or the chan pad poo, a silken rice noodle dish brimming with crab meat, green onion and egg. When the fruit is in season, end your meal with mangoes paired with warm sticky rice.
