 Maze by Gordon Ramsay in the One&Only Cape Town is modeled after the London restaurant of the same name. The space was envisioned by designer Adam Tihany, whose other restaurant projects include New York's Le Cirque and Per Se. Tasting-sized dishes are prepared in an open kitchen and range from Cape Malay mussels with garlic baguette to pan-fried hake wrapped in Parma ham to roasted honey and balsamic quail with walnuts, pear and saffron chutney. Local seafood, Australian Wagyu and game like ostrich and springbok are also featured on the menu. Desserts include an apple crisp sundae with cinnamon ice cream, and a peanut butter and cherry jam sandwich accompanied by cherry sorbet.
