| This chain out of Portland, Oregon, provides a coast-to-coast (plus Hawaii and Alaska) tour of regional seafood dining, proudly announcing the provenance of everything from its Asian-style seared yellowfin tuna (Panama City, Florida) to its sea scallops with prosciutto, mushrooms and Asiago (Georges Bank, Massachusetts). Local waters don’t get neglected: Maryland themes punctuate the dining room décor, and Inner Harbor views entice diners to window seats or, in clement weather, the patio. Crab and rockfish are the local stars of a daily menu that offers thirty or more fresh fish and shellfish; there’s a corporate air about the cooking, but the seafood is exceptionally fresh. The oyster sampler is a terrific starter; work your way eastward from Pacific to Atlantic varieties. |
