Casa Maya is unassuming and casual, but the authentic regional selections from the Yucatan Peninsula make it well worth a trip to this off-the-beaten-path Inland Empire spot. Sadly, most Californians are only familiar with the Americanized border cooking that most Mexican restaurants offer. In truth, there are significant regional variations that reflect the rich blending of indigenous Indian, French and Spanish influences, as well as subtleties contributed by other ethnic groups. Because of this heritage, a visit to Casa Maya may permanently change your opinion about Mexican food. Dishes such as poc chuc (marinated in sour orange juice and served with a tangy sauce and pickled onions), cochinita pibil (seasoned with peppers, garlic, cumin and salt, then wrapped in banana leaves and baked) and shredded beef in salpicon (in a red sauce with habanero and cilantro) are just some of the offerings that we recommend. For the less adventuresome there are chile rellenos and moles, and the familiar tacos, enchiladas, tostadas and burritos are also on the menu.
