If you are following the Dutchess Wine Trail, a stop at Cascade Mountain Winery is a must---particularly on a sunny summer or fall day. Sit out on the wraparound deck, enjoy the outdoors and then take a gander at the vineyards---ten acres of French hybrids. It's a casual, laid-back country spot. We recommend a leisurely lunch with the upscale food. With a Louis Armstrong CD playing What a Wonderful World, we sipped wine, relaxed and agreed, what a wonderful spot. Try its tasty take on the spinach salad with truffle oil and shallot vinaigrette, pancetta and shaved Parmesan. Lunch entrées range from filet mignon and portobello mushroom sandwich with roasted pepper and garlic aïoli to more elaborate fare, such as the pan-seared salmon with crème frâiche, which is placed over a most unusual, but delicious, fennel and turnip purée with sautéed crunchy cucumbers. The dish is a delightful interplay of textures. Top off lunch with a stellar chocolate truffle cake. Order a glass of the Vintage Private Reserve white or red and relax. There's a tasting room downstairs where they also sell related Hudson Valley products, including jams and dressings.
