Crabtree’s Kittle House is a Westchester institution --- elegant but not pretentious, formal but not outdated. Owner John Crabtree has a loyal following of local celebrities and happy regulars who frequent any one of his many dining rooms, or perhaps the ultra-private 16-seat table adjacent to a wine cellar: 67,000 bottles from all over the world and an array of just under 6,000 labels. First courses feature delicate selections like a ginger-sesame marinated organic tofu salad with pea tendrils and poached local duck egg, and house-smoked sustainable Wester Ross Scottish salmon with Yukon Gold blini and Meyer lemon crème fraîche. Main courses feature complex, well-executed fare such as Beaverkill Hatchery rainbow trout with roasted bluefoot mushrooms and barley ragoût in a red shiso beurre blanc, as well as Grimaud Farms guinea hen served with red wine braised shallots and Jerusalem artichoke-rye chop mashed potatoes in a Cabernet Sauvignon sauce. Desserts may include a delightful “Kittle Krack” pie with coconut ice cream and macadamia nut brittle. The Tap Room is a more dressed-down, copper-ceilinged dining alternative that serves upscale takes on bar favorites ranging from a Wagyu hot dog with beer-batter onion rings to burgers made with meat from butcher Pat LaFrieda.
