Well-seasoned grilled or shredded beef, chicken or tongue nestled in a couple of fresh-from-the-griddle corn tortillas is the star. You’ll want it with all the accompaniments: onions, a splash of tomatillo salsa and pico de gallo. Mexican sandwiches, or “tortas,” also are available with the same wide range of meat choices.
