A new menu is printed daily to take advantage of the freshest of the catch, and each branch of the chain has an executive chef who prepares regional specialties as well as the classics. In Baltimore, that includes such dishes as grilled Chesapeake Bay oysters; jumbo lump crab meat cocktail; and crab cakes with creamy mustard mayonnaise.
