New York may have its double-wide, thin-crust, meant-for-folding-pizza, and Sicily its token thick crust, but if California could stake a claim on pizza, it should be on the beauties inside the ovens at Pauline's. Sure the crust is crisp and flavorful, but the toppings really shore up that California style: organic vegetables (some from the restaurant's own garden), artisan cheeses, pristine herbs and meats like pancetta, andouille sausage or slow-roasted pork. The pesto, for which Pauline's is famous, gets slathered on after the pizza leaves the oven, ensuring that it remains vividly green and flavorful till the last bite. Don't let the desolate location chip away at your expectations. Inside the pale-yellow corner building with yellow bars on the windows are well-spaced tables topped with white linens and dappled with candlelight. Casual staff members meander around, making sure everyone understands the menu and satisfying wine list. Although it is hard to admit, this pizza place is almost romantic.
